    Sausage and Peppers


    2 Tbs olive oil
    1 pound package of smoked turkey sausage or Italian turkey sausage
    1 small green bell pepper
    1 small red bell pepper
    1 small yellow bell pepper
    1 small purple onion
    1/2 package of sliced mushrooms (1 1/2 cups)
    1 cup chicken broth or white wine
    1/4 tsp salt
    1/4 tsp pepper
    1/2 tsp oregano
    1/2 tsp thyme

    Recipe





    Slice the sausage in half lengthwise and then crosswise into 1/2 inch pieces.

    Slice the green, red and yellow peppers into strips. Slice the onion in half and then slice each half vertically.

    Heat the oil in a large skillet over medium heat until hot. Add the sliced sausage and cook, stirring occasionally until lightly browned.

    Add the onions, peppers, and mushrooms to the skillet and cook, stirring frequently until the vegetables just begin to soften. Add the chicken broth or white wine, salt, pepper, oregano and thyme, stir to combine and scrape up browned bits from bottom of skillet. Reduce heat to low, cover and let simmer for 5 - 7 minutes.

    Servings: 4-5
