    Blackberry Freezer Jam

    Blackberry Freezer Jam




    3-1/4 cups prepared fruit (any type berry will do)
    1/4 cup fresh lemon juice
    1 box pectin
    1 cup light corn syrup
    4-1/2 cups sugar measured into separate bowl


    Recipe


    Mash blackberries thoroughly one layer at a time.
    Press half of pulp through a sieve to remove seeds.
    Measure exactly 3-1/4 cups prepared fruit into large bowl then stir in lemon juice.

    Stir pectin into prepared fruit in bowl and let stand 30 minutes stirring every 5 minutes.

    After standing 30 minutes stir in corn syrup.

    Gradually add sugar stirring until well blended.

    Stir an additional 3 minutes or until sugar is completely dissolved and no longer grainy.

    Fill all containers immediately to within 1/2" of tops.
    Wipe off top edges of containers then immediately cover with lids.

    Let stand at room temperature 24 hours.

    Store in refrigerator up to 3 weeks or freeze extra containers up to 1 year.

    Thaw in refrigerator before using.
