Cactus Pickles
2 quarts whole prickly pear fruits
2 cups raw sugar or (Whey Low type D for a diabetic version)
2/3 cup vinegar
3 oz red cinnamon candies (2 cinnamon sticks and a 2 drops red food
coloring)
1 to 2 whole cloves (optional)
Recipe
Remove the skins of the fruits, cut each fruit in half lengthwise, and
remove the seeds. Prepare a syrup by mixing the sugar, vinegar, and
cinnamon candies in a pot; bring to a boil. Cook pear halves until
transparent in the syrup.
If you use cloves, put them in a cheesecloth bag so they can be removed
before the pickles are put in jars that are equipped with standard
canning lids. Process for 15 minutes in a bath of boiling water.
Makes about 4 pints
NOTE: Traditionally, the prickly pear cactus has been used as a panacea
for over 100 different ailments. More recently, it has been the subject
of blood cholesterol research trials sponsored by the American Heart
Association. In addition to the results of this research, Knishinsky
includes scientific studies on the antiviral properties of the cactus to
treat herpes, influenza, and HIV, as well as its use in treating
obesity, gastrointestinal disorders, and skin ailments.
