Freezer Cabbage Relish
1 medium-size cabbage, shredded (14-16 c.)
1 onion, thinly sliced
1 green pepper, thinly sliced
2 carrots, shredded
1 Tbsp. pickling salt
1/2 c. sugar
2 t. dry mustard
2 c. cider vinegar
Recipe
In a bowl, combine the cabbage, onion, green pepper, carrots and pickling salt. Mix well. Set aside for at least 2 hours.
Taste a piece of cabbage. If it is too salty, rinse and drain briefly (it is usually not necessary).
Prepare the brine by mixing together the sugar and mustard in a small bowl. Stir in the cider vinegar. Keep stirring until all is dissolved. Pour over the vegetables.
Pack into freezer containers, leaving at least 1 inch. head space. Freeze.
Defrost in the refrigerator for at least 8 hours before serving.
Try grilled cheese and freezer cabbage relish on rye for lunch.
