Jalapeno Pepper Jelly
3/4 c red bell peppers coarsely ground
3/4 c green bell peppers coarsely ground
1/4 c jalapeno peppers hot, rinsed, seeded & finely chopped
6 1/2 c sugar
1 1/2 c white vinegar
1 bottle liquid pectin (6 oz)
Recipe
I put red and green peppers through food grinder using medium
blade. (Food processor may be used if desired.) Drain mixture,
reserving juice; add jalapeno peppers. Combine juice from
ground peppers, sugar and vinegar in large saucepan; bring to
boil and remove from heat. Add peppers and liquid pectin,
stirring until mixture thickens. Fill sterilized glasses;
seal. Process in water bath for 10 minutes. Makes 6 servings
Note: For high altitude, add 1 minute processing time for each
1,000 feet above sea level.
