Pickled Pears
2 quarts cold water
2 tbs. vinegar
6-1/2 lb. firm pears
2-1/2 cups white vinegar
1-3/4 cups water
2-3/4 cups sugar
1 tbs. mixed pickling spice
1 tsp. whole cloves
1 whole ginger root
Recipe
Vinegar Solution:
Mix 2 quarts water & 2 tbs. vinegar in a large bowl. Core pears & cut into 1 inch wedges. Drop pears into vinegar solution to prevent discoloration.
Pickling Syrup:
Combine 2 /2 cups vinegar, 1 3/4 cups water, & 2 3/4 cups sugar in a large stainless or enamel kettle. Tie pickling spice, cloves, & ginger root in cheesecloth & drop into kettle. Bring to a boil. Rinse off vinegar solution from 1/4 of pears with cold water. Add to boiling syrup & return to a boil. Simmer covered until pears are just barely tender (about 4 to 6 minutes). With a slotted spoon remove pears to a large bowl. Repeat with remaining pears (1/4 at a time). Pour syrup over pears, cover, & refrigerate overnight. To process, place pears & syrup in a large kettle & bring to a boil. Place pears & syrup into hot sterilized jars & seal. Leave 1/2 inch head space. Process in boiling water bath for 20 minutes. Cool jars & check seals.
