    Pumpkin Jam


    5 lbs. pumpkin*
    1 lb raisins
    1 lb dried apricots, washed and cut into strips
    2-1/2 lbs. sugar

    Recipe





    Pare pumpkin up, remove the seeds and cut the pulp into cubes.

    Place in a stainless or enamel pot.

    Add the sugar and stir well. Allow to set overnight.

    Add apricots and raisins and stir.

    Cook slowly, over a medium to low heat, stirring frequently,
    until the pumpkin is tender and clear.

    *Canned pumpkin may be used in place of the fresh pumpkin.
