Sweet Pickle Sticks From Hel
3 3/4 cups white vinegar (regular or pickling – pickling has higher acidity)
3 cups white sugar
3 tbsp salt
4 1/2 tsp celery seed
4 1/2 tsp turmeric
3/4 tsp mustard seed
Recipe
Boil together for 5 minutes. Pour boiling hot over the pickles in jars to within 1/2" of top. Process in boiling water bath 5 minutes. This amount of solution fills 6 pints.
Use fresh firm pickling cucumbers. Wash, cut into quarters lengthwise. Put in large bowl, pour boiling water over. Let stand 4-5 hours. Drain and pack tightly into clean hot pint jars. Then proceed with above brine.
**If you don't have all these spices, just pick up some at the bulk stores. Way less expensive, and you can just buy as much as you need. I did 20lb of cucumbers, and got 27 pints using 4x the brine recipe. Try slicing them lengthwise also, for sandwiches, I cut them about 1/3" thick, before adding the boiling water.
