Ten Day Pickles (Crispy) Recipe
1 - Put whole pickle cucumbers in salt water strong enough to carry an
egg [took about 3 cups/gallon of water.] Let stand 3 days.
Day 4 - Drain and put in fresh water for 3 days. Weigh them down to keep
them covered.
Day 7 - Slice them and put in cold water. Add alum the size of an English
walnut and a little vinegar. Heat them till they show green. Stir often.
Drain.
For 7 pounds of cucumbers, make a syrup of [wasn't enough syrup so we had to make more]:
4 lbs sugar
1 pint of vinegar
¼ oz stick cinnamon
¼ oz allspice berries
Pour over cucumbers.
Day 8 - Drain syrup off pickles and heat. Pour over cucumbers.
Day 9 - Repeat above step.
Day 10 - Put pickles in syrup and let them get hot but don't let them boil.
Put in jars and seal
