Bacon Potato Pie Casserole from David
1 pound bacon thick sliced and lean
1 white onion minced
1 pound baking potatoes
1/2 pound cheddar cheese grated
8 eggs
Recipe
Cut bacon slices into square pieces then fry until well cooked and
drain on paper towels.
Peel potatoes then place in bowl of cold water to prevent discoloration
then grate potatoes.
Drain well and squeeze dry.
Butter a rectangular shallow baking dish then preheat oven to 350.
Beat eggs in a large bowl then add remaining ingredients and stir.
Pour mixture into baking dish and bake 45 minutes then serve hot or at
room temperature.
