    Tamale Casserole from David


    Left-over pork roast, chopped
    1 large chopped onion
    1 drained can of black beans
    1 drained can of Rotel tomatoes (your choice of heat level)
    A little olive oil
    Left-over cornbread, crumbled

    Recipe




    "Sauté" the onion in the olive oil until tender, then add the
    chopped up meat. Next, add the black beans and Rotel tomatoes.
    Cook until all ingredients are hot.
    Make a "bottom layer" of crumbled cornbread
    Pour the meat mixture over it, then another layer of crumbled
    cornbread - and "dot" with butter pats.
    Bake for 30 minutes at 325 degrees. (I used a 8" round dish)
    NOTE: I like to pour the juice from the tomatos over the dish
    once it's all put together, it add some heat
