National Corn Chip Day celebrates the Corn Chip. Fifty years ago, few Americans knew what Corn Chips were. Today, most American cannot imagine life without this tasty, crunchy holder of salsa, cheese and (mostly) Mexican dips. It's even sprinkled atop salads, making salads even more crunchy.
On National Corn Chip Day, enjoy eating one of your favorite snacks. And, take our Corn Chip challenge....eat corn chips for breakfast, lunch, dinner and snacks today! I don't know about you. But, I will find that easy to do.

HOME COOKIN’ 01/29/2011 National Corn Chip Day Chili Cheese Frito
Chili Cheese Frito
1 pound of meat beef (ground beef)
1 medium onion Chopped 1 green pepper (optional, can be spicy)
2 cloves garlic, minced
1 to 2 tbsp mild chili powder
1 bay leaf
1 teaspoon oregano
1 teaspoon ground cumin
salt and black pepper to taste
28 oz cans crushed or chopped tomatoes
2 15 oz of beans of your choice … kidney, black, roses, or pinto, or black Eyed Peas if you like (you can remove some of the ingredients if you think they are hot)
Recipe
Sauté onion and garlic (and green pepper) until smooth.
Add the meat in small pieces and brown.
Add spices, herbs and tomato products and beans (drained).
Stir to Incorporate.
Simmer 1-1 / 2 hrs to merge the flavors.
Stir every 20 minutes or so, or use the oven to 350°
Serve with rice or corn bread
