    Recipe Introduction

    The first croissant was created in 1683 in Vienna. During that time, Austria was under siege by the Turkish Empire. The Turks were unsuccessful in their multiple attempts to enter Vienna by force, so they decided to dig an underground tunnel to get into the city. Ironically enough, Vienna bakers, who typically work underground, were able to hear the noises of the Turks digging. The bakers called in their army and the Turkish Army had to retreat. The bakers were thanked and honored for their assistance in protecting their city from the Turks. In celebration, they also decided to bake their bread in the shape of a crescent moon (the same symbol found on the Turkish flag). Thus the croissant was born! Over one hundred years later Marie Antoinette, an Austrian Princess who married Louis XVI, introduced the croissant to the French. The pastry gained instant popularity in France and it went on to become the French National Product in 1920. To celebrate National Croissant Day, warm up a delicious croissant to enjoy with butter.     Chicken Salad Croissant


    2 cups cubed cooked chicken
    1 cup cubed Swiss cheese
    1/2 cup dill pickle relish
    2/3 cup mayonnaise
    1 tablespoon minced fresh parsley
    1 teaspoon lemon juice
    1/2 teaspoon seasoned salt
    1/8 teaspoon pepper
    Lettuce leaves
    6 croissants split

    Recipe


    In a large bowl, combine the chicken, cheese and pickle relish.

    Combine the mayonnaise, parsley, lemon juice, seasoned salt and pepper; add to chicken mixture and mix well.

    Place a lettuce leaf on each croissant; top with about 1/2 cup of the chicken mixture.

    Yield: 6 servings.
