02/15/2011 National Gumdrop Day Oatmeal Gumdrop Cookies

    Source of Recipe

    Land O'Lakes.

    Recipe Introduction

Gum drops are a tasty, chewy candy. They are usually cone-shaped, brightly colored, and are coated in granulated sugar. Gum drops come in a variety of flavors including grape, orange, and lemon. Spice drops, a variation of a typically gum drop, are usually larger and live up to their "spice" name with a bit of a kick when you chew them. They come in spice flavors such as ginger, cinnamon, and nutmeg rather than the fruit flavors of gum drops. The history surrounding gum drops is uncertain, though many people believe that they were invented in 1801 by a man named Percy Trusdale. Regardless of when they were invented, gum drops today are a popular type of candy that is enjoyed across the country. To celebrate National Gumdrop Day, use colorful gum drops to decorate a cake or cupcakes, or just buy a bag to share with your friends! My Punch Bowl

    Oatmeal Gumdrop Cookies

    1/2 cup sugar
    1/4 cup LAND O LAKES® Butter, softened*
2 tablespoons firmly packed brown sugar
    1 egg
    1/2 teaspoon vanilla
    1 cup all-purpose flour
    1/2 cup uncooked quick-cooking oats
    1/2 teaspoon baking soda
    1/4 teaspoon salt
    1/2 cup chopped gumdrops

    Recipe

Combine sugar, butter and brown sugar in large bowl. Beat at medium speed, scraping bowl often, until creamy. Add eggs and vanilla; continue beating until well mixed. Reduce speed to low; add flour, oats, baking soda and salt. Beat until well mixed.

Stir in gumdrops by hand. Shape dough into 9x1 1/2-inch roll. Wrap in waxed paper; refrigerate until firm (at least 2 hours).

Heat oven to 350°. Cut roll, using serrated knife, into 3/8-inch slices. Place 1 inch apart onto lightly greased cookie sheets. Bake for 10 to 12 minutes or until lightly browned and set. Immediately remove from cookie sheets. Cool completely.

*Substitute LAND O LAKES® Soft Baking Butter with Canola Oil right from the refrigerator.
