It's Cherry Pie Day. Cherry pie is America's second most popular pie, behind only apple pie in popularity. However, in the month of February, it's Number 1.
As a young boy, George Washington made the Cherry tree popular, with his famous quote "I can not tell a lie, I chopped down the Cherry tree." We celebrate George Washington's Birthday and President's Day in February. Appropriately, its traditional to bake cherry pies in honor of the occasion.
Being the "hot pie" of the moth, it is only fitting that Cherry Pie Day falls in February. On Cherry Pie Day, celebrate today with a piece of pie.

Black Forest Cherry Pie
2/3 cup sugar
3 tablespoons cornstarch
¼ salt
2 cups milk (or non-dairy creamer)
2 slightly beaten eggs
2 tablespoons butter (or margarine)
1 teaspoon vanilla
2 oz. semisweet chocolate, melted
1 9” baked pastry shell
2 cups dark sweet cherries, pitted and halved
½ cup heavy whipping cream (or non-dairy Rich whip)
Recipe
Combine sugar, cornstarch and ¼ teaspoon salt; gradually stir in milk.
Cook and stir until bubbly; cook 2 minutes more.
Stir small amount of hot mixture into eggs; return to hot mixture and cook 2 minutes more. (this is so the eggs don't curdle)
Remove from heat; add butter and vanilla.
Stir ½ custard mixture into chocolate; spread in pastry
shell. Cover surface of vanilla mixture with waxed paper; cool 30 minutes. Arrange cherry halves, cut side down, on chocolate, reserving 8 halves.
Spread remaining vanilla custard mixture onto top of cherries.
NOTE: If the custard is too runny, which it may be if you are using non-dairy ingredients, bake for 30-40 min. at 375. Cover the pie crust with foil so it won't burn. This should set the custard.
Whip cream; spoon or pipe whipped cream onto top of pie. Add cherry halves
Covered with whipped cream and decorated with fresh sweet cherries.
This was almost a Pie Fail. The custard came out too runny, I baked it for 1/2 an hour to set the custard.
UPDATE: The vanilla custard was a complete FAIL. Next time I will just use chocolate pudding mix for the filling and leave out the vanilla layer.
