Did you know that the name “cordon bleu” actually means “blue ribbon” in French? These blue ribbons were often worn by the Knights of the Holy Ghost -- a distinguished order of French knights who were famous for their delicious dinners.
Today, cordon bleu is a tasty dish composed of chicken, ham, and Swiss cheese. Contrary to popular belief, cordon bleu did not originate in the well known Le Cordon Bleu cooking schools in Europe. It is believed that this dish evolved over time.
There are many cuisines from different regions in Europe that share characteristics with cordon bleu. Almost all of them are breaded, fried, and made of chicken wrapped around a stuffing. The names and recipes of these European dishes vary, but their connection to cordon bleu is evident.

Quick Chicken Cordon Bleu
• 4 boneless skinless chicken breast halves (6 ounces each)
• 4 thin slices deli ham
• 2 slices Swiss cheese, halved
• 1/4 cup butter, melted
• 1 envelope seasoned coating mix
Recipe
Flatten chicken to 1/4-in. thickness. Place ham and cheese down the center of each; roll up and secure with a toothpick. Place butter and coating mix in separate shallow bowls. Dip chicken in butter, then roll in coating mix.
Place in a greased 2-qt. microwave-safe dish. Cover loosely and microwave on high for 5-7 minutes on each side or until no longer pink. Let stand for 5 minutes. Discard toothpicks. Yield: 4 servings.
