    When is National Strawberry Shortcake Day ? June 14! National strawberry shortcake day is a day we honor the old time favorite cake called the shortcake. On National shortcake Day its traditional to serve you and your family shortcake for dessert on this day. The most popular way to eat a slice of shortcake is with fresh strawberries in juice or sauce with cream on top. It's very common though to serve shortcake with any other fruit that you may have. Bananas, peaches, blueberries, blackberries raspberries will all work on top of a shortcake just fine. Did you know that besides on National Shortcake Day this yummy dessert is the #1 dessert that is traditionally served on July 4th, the Independence Day Holiday! Yes indeed it is. In the United States just about every 4th of July cookout will have this cool and refreshing dessert on the table. Many times blueberries are added to the red strawberries to make the dish "red, white & blue" symbolic for the holiday colors. Origin of this holiday: Our research did not find the creator, or the origin of this day. We did however find that this holiday has been celebrated for years. There is plenty of documentation to support that this holiday does indeed exist. This holiday is referred to as a "National" day., as all food holidays are. However, we did not find any congressional records or presidential proclamations for this day. Even though we didn't, this is still a holiday that is publicized to celebrate.     Upside-Down Strawberry Shortcake


    1 cup miniature marshmallows
    2 packages (10 ounces each) frozen sweetened sliced strawberries
    1 package (3 ounces) strawberry gelatin
    1/2 cup shortening
    1-1/2 cups sugar
    3 eggs
    1 teaspoon vanilla extract
    2-1/4 cups all-purpose flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    1 cup 2% milk
    Fresh strawberries and whipped cream

    Sprinkle marshmallows evenly into a greased 13-in. x 9-in. baking dish; set aside. In a small bowl, combine strawberries and gelatin powder; set aside.

    In a large bowl, cream shortening and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition.

    Pour batter over the marshmallows. Spoon strawberry mixture evenly over batter. Bake at 350° for 45-50 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Cut into squares. Garnish with strawberries and whipped cream. Yield: 12-16 servings.

    Nutrition Facts: 1 serving (1 piece) equals 272 calories, 8 g fat (2 g saturated fat), 42 mg cholesterol, 183 mg sodium, 47 g carbohydrate, 1 g fiber, 4 g protein.
