    It’s National Chocolate Pudding Day! Chocolate pudding is a delicious dessert full of a rich, chocolate flavor and a heavenly, smooth texture. Though it is not known when the first pudding originated, it is certain that early forms of puddings were actually savory, not sweet. In fact, they were usually meat-based! Sometime around the 17th century, sweet puddings were produced. These versions contained flour, nuts and sugar and often resembled cakes. It was not until the mid-19th century that English chemist Alfred Bird developed egg-free custard powder, which is used to make modern day pudding. Today, there are two main preparations of chocolate pudding that are popular in different regions of the world. Chocolate pudding is boiled and then served chilled in the U.S., Canada and Asia. Here, it is considered a variation of chocolate custard and is usually made with milk, sugar, starch and chocolate flavorings. Meanwhile, chocolate pudding that is served in Great Britain and Australia is baked and it has a similar texture to that of cake. This type of pudding is typically made from flour, baking powder, sugar, eggs and cocoa powder. No matter where you enjoy your chocolate pudding today, it will certainly be a delectable treat!     Orange Chocolate Pudding


    1/2 cup semisweet chocolate chips
    2/3 cup half-and-half cream
    1 egg yolk
    1 tablespoon thawed orange juice concentrate

    Recipe



    In a small heavy saucepan, melt chocolate chips with cream over medium heat; stir until smooth. In a small bowl, combine egg yolk and orange juice concentrate. Stir a small amount of hot chocolate mixture into egg mixture; return all to the pan, stirring constantly.

    Bring to a gentle boil; cook and stir 1 minute longer or until mixture reaches 160° or coats the back of a metal spoon. Remove from the heat.

    Cool for 15 minutes, stirring occasionally. Transfer to dessert dishes. Cover and refrigerate for 1 hour before serving. Yield: 2 servings.

    Nutrition Facts: 1 serving equals 352 calories, 23 g fat (14 g saturated fat), 146 mg cholesterol, 48 mg sodium, 33 g carbohydrate, 3 g fiber, 6 g protein.
