Fancy some fish? Good, because it’s National Caviar Day!
Caviar is the processed, salted roe of fish. These tiny, black eggs are distinct from those of other fish. Salmon roe, for example, are much larger and orange. This is because technically the term “caviar” is reserved for the roe of sturgeon, a classification of fish. In order to be true caviar, the sturgeon eggs must come from the Caspian and Black Seas.
This salty delight is considered a delicacy worldwide. If you’re feeling adventurous, try some today! If not, grill a nice piece of fish to celebrate National Caviar Day!

Scrambled Egg Parfait with Caviar
2 whole eggs
1 tsp. fresh chives, chopped
1 tbsp. half and half
1/2 tsp. unsalted butter
Salt and Pepper to taste
1 branch fresh chervil
1/2 ounce Caviar
Recipe
Mix eggs, half and half, salt and pepper in small bowl, and scramble with butter in sautè pan 'til done.
Fold with fresh chives and place in parfait glass.
Garnish with 1/2 ounce Caviar and fresh chervil.
