    I received an e-mail a couple of days ago informing me that the 27th of July is National Scotch Day. It would seem that national scotch day is an American celebration, and I’ve never actually heard of it before… So I decided to give it a quick Google to see if I could find out more, which unfortunately I could not. All I found was the odd post on various blogs where people mentioned National Scotch Day, with one site claiming that it is, in fact, on the 22nd rather than the 27th of July. What these blogs and sites all had in common is that National Scotch Day seemed new to them, too.It would seem, then, that National Scotch Day, or rather whoever is behind the event, needs to go about marketing it a bit better, and make it clear when it actually is. So far as I’m concerned, though, there is only one solution to the problem, and that is to raise a celebratory dram on both the 22nd and 27th.

    ROD RECIPES 07/27/2011 National Scotch Day Scotch Whiskey Iced Parfait



    Scotch Whiskey Iced Parfait


    6 pitted prunes
    60ml scotch whiskey
    350ml thickened cream, whipped to soft peaks
    125g castor sugar
    50ml water
    2 egg whites

    Recipe


    Chop the prunes into small pieces and soak in the scotch for 2 hours.
    Place the sugar and water in a small saucepan and cook until it reaches soft ball stage.
    Whilst the sugar is cooking whip the egg whites to soft peak.
    Once the sugar is ready, slowly add to the egg whites while continually whisking on a low setting. Once all the sugar syrup is incorporated, turn the beater up to medium and continue until the meringue cools.
    Fold the prunes into the cream and then fold in the Italian meringue.
    Place in the serving dishes or bowls and freeze overnight.
