Happy National Raspberries in Cream Day!
There may not be a bad berry-cream combo, but we think that of raspberries and cream is particularly winning as a result of the fruit's pleasantly puckering tartness.
A genius at "minimalist home cooking," our beloved Stone soup chef smartly paired the duo with a simple, three-ingredient almond cake, allowing the berry-and-cream combo to shine. In addition to the tantalizing recipe, they also provided a helpful, international guide to creams for those of you less-than-certain about the difference between sour cream and creme fraiche, single cream and whipping cream. Raspberries In Cream
2 cups fresh blueberries or raspberries
4 ounces reduced-fat cream cheese, at room temperature
2 teaspoons honey
3/4 cup low-fat vanilla yogurt, drained
2 teaspoons freshly grated lemon zest
fresh mint (to garnish)
Recipe
1. In a mixing bowl, add the yogurt, cheese and honey.
2. Using an electric mixer, beat at high speed until light and creamy.
3. Stir in the lemon zest.
4. Layer the blueberries (or raspberries) and lemon cream in dessert dishes or wineglasses.
5. Garnish with a sprig of mint and serve.
