What a debt we owe to molasses, a mere by-product of the sugar refining process. Centuries ago, in the Caribbean, it was first used to distill rum. Rum quickly became the New World's signature spirit. Sweet yet potent, rum became the liquor of choice for gentlemen and for pirates. That's to say nothing of the entire British Royal Navy, which until 1970 distributed a daily rum ration to sailors.

Apple Cider Buttered Rum
- 1 gallon apple cider
- 2 cups dark rum
- 1/2 ounce unsalted butter
- Garnish: cinnamon sticks
Recipe
Combine cider and rum in a large pot and bring to a boil.
Place 1 cinnamon stick in each serving mug. Fill mug with cider mixture and top with a dollop of butter.
