    World Famous Blueberry Pancakes


    Two cups self rising flour
    Two heaping table spoons sugar
    One eighth teaspoon cinnamon - in other words not much okay....
    One tablespoon olive oil
    3 medium sized eggs
    1/3 cup blue berries
    About one cup whole milk - just pour enough to make plump bubbles when mixing.

    All right, most of you folks know that breakfast has to start with eggs n bacon right? Right.

    So, take some of the bacon grease that you've saved in a jar in the fridge, and put it on a warm griddle - not hot mind you. Warm is somewhere between low and medium.

    Here's where the secret takes place - cut a square of pure butter and place in the middle of the melted bacon grease - this can't be on a hot skillet! Once the butter is dissolved, take a ladle full of the pancake batter and pour directly into the middle of the bacon fat/melted butter. Now watch the bubbles till they start to harden at the top - this thing's ready to flip.

    Grab the spatula..slide under the pancake front to back to ensure it's ready - now flip with one single motion!!! Let the other side cook for about two minutes.

    You've got a perfectly made "World famous blueberry pancake". At this point the only thing you're missing is a little bit of crumbled sausage to sprinkle on top of the pancake before dousing with your favorite syrup. Enjoy!
