A scallop is a type of marine mollusk of the Pectindae family. They range in size from 2 inches to 5 inches and have the ability to swim and leap about by snapping their shells. They also snap their shells when their eyes sense a change of light or danger approaching. The muscle used for these activity is the only part of animal that is eaten.
Scallops are a highly prized source of food, known for their delectable taste and the variety or ways in which they can be eaten. Depending on where you are in the world, scallops will be prepared differently. In European cuisines, scallops are commonly prepared in a quiche or cooked into a savory custard. Scallops in Japan are served in soups or they can also be prepared in sushi. In Western culture, scallops are usually sauteed in butter, breaded, or deep fried. Oven Fried Scallops
Vegetable oil spray
1 pound fresh or frozen scallops
1/2 cup low-fat buttermilk
1/2 cup plain bread crumbs
Dash paprika
2 tablespoons snipped fresh parsley
GARNISH
4 lemon wedges
Recipe
Preheat oven to 500° F.
Lightly spray a shallow baking dish with vegetable oil.
Rinse fresh scallops in cold water and drain, or thaw and drain frozen scallops.
Pat dry and set aside.
Place buttermilk and bread crumbs in separate small shallow bowls.
Soak scallops in buttermilk and then roll them in bread crumbs.
Sprinkle with paprika.
Arrange scallops in a single layer in prepared baking dish.
Bake 8 to 10 minutes.
Sprinkle with parsley and garnish with lemon .wedges before serving.
