Recipe Introduction
Today is the day to honor this spicy Mexican favorite! Tacos can be made with many different fillings and are folded inside a soft or hard tortilla.
Did you know that the first documented consumption of a taco occurred in 1520 by Spanish soldiers Bernal Diaz del Castillo and Hernando Cortez while visiting the New World of the Aztecs in Mexico? The soldiers loved the Mexican tacos so much that they wrote to King Charles V of Spain about them.
Tacos are a worldwide treat and can be eaten for breakfast, lunch, dinner, or just as a snack. To celebrate National Taco Day, invite your friends over for make-your-own taco night!

Chicken Tacos
1/3 Cup olive or vegetable oil
1/4 Cup lime juice
4 garlic cloves, minced
1 Tbs minced fresh parsley or 1 tsp dried parsley flakes
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp pepper
4 boneless skinless chicken breast halves (1 1/4 lb.)
6 (8-inch) flour tortillas or taco shells, warmed
Toppings of your choiceRecipe
In a large re-sealable plastic bag or shallow glass container, combine the first 8 ingredients. Add chicken and turn to coat. Seal or cover and refrigerate 8 hours or overnight, turning occasionally. Drain and discard marinade. Grill chicken, uncovered, over medium heat for 5 to 7 minutes on each side or until juices run clear. Cut into thin strips; serve in tortillas or taco shells with desired toppings.
