    Mac & Cheese for 50



    6 to 8 lb. macaroni
    1 lb butter [ or margarine]
    2 1/2 cups flour
    1/4 cup salt [opt.]
    1 tsp. black pepper
    2 1/2 gal. milk
    5 lb. cheese, cubed
    buttered bread crumbs [opt.]

    Recipe






    1. Cook macaroni as directed, until just tender. Drain well.

    2. Make a thin white sauce, by melting butter [or margarine], stir in flour, add milk slowly, stirring carefully, and cooking slowly until slightly thickened.

    3. Combine macaroni. and sauce, and add 2/3 of the cheese. Spread into 5 greased 10 X 16 inch baking pans. Sprinkle remaining cheese over top. Top with buttered bread crumbs if desired.

    4. Bake at 250 degrees for 20 to 30 min. or until heated through and slightly browned.
    served about 50 people.
