    Black Magic Cake


    1-3/4 cups flour
    2 cups sugar
    3/4 cup baking cocoa (I use Hershey's Special Dark Cocoa)*
    2 tsp. baking soda
    1 tsp. baking powder
    1 tsp. salt
    2 eggs
    1/2 cup vegetable oil
    1 cup strong black coffee (or 1 tablespoon instant coffee dissolved in 1
    cup boiling water )
    1 cup buttermilk**
    1 tsp. Vanilla

    Recipe





    Preheat oven to 350F. Grease and lightly flour (I use cocoa) two 9-inch
    round cake pans or one 13x9x2-inch baking pan. Sift together flour,
    sugar, cocoa, baking soda, baking powder and salt into the mixing bowl
    of a stand mixer. Add eggs, oil, coffee, buttermilk and vanilla. Beat
    with electric mixer at medium speed for 2 minutes. Pour batter into
    prepared pan(s). Bake for 30-35 minutes for round pans, 35 to 40
    minutes for rectangular pan or until a wooden toothpick inserted into
    the center comes out clean. Cool in pan(s) on wire racks. Remove from
    pans and cool completely. Dust with powdered sugar just before serving.

    *If you can't find Hershey's Special Dark use any Dutch process cocoa.
    That's what gives it the deep dark chocolate color.

    **You can make buttermilk by mixing 1 tsp. of vinegar in regular milk,
    but I use real buttermilk. I usually buy buttermilk when it's on sale,
    freeze it in one-cup portions and then defrost the portions as needed.
