    California Cling Peach Coffee Cake


    1/4 cup butter
    1 cup sugar
    1/4 cup sour cream
    1 egg
    1 tsp vanilla
    2 cup all-purpose flour
    1 tsp baking soda
    1/2 tsp salt
    1 cup buttermilk
    2 cup California Cling peaches, well-drained finely sliced
    1/2 cup brown sugar
    2 tsp cinnamon

    Preheat oven to 350 F Beat together the butter and sugar until creamy, then incorporate the 1/4 cup of sour cream. Beat in the egg and vanilla.

    In a separate bowl, sift together the flour, salt and baking soda. Slowly add to the butter mixture, alternating with the buttermilk, and finishing with the flour. Stir to thoroughly incorporate.

    Pour half of the prepared batter into a lightly greased 9-inch x 13-inch pan. Arrange half of the peaches on the batter and sprinkle with one teaspoon of cinnamon. Top with the remaining batter. Finish cake by arranging the remaining peaches over the top of the batter. Mix together brown sugar and remaining teaspoon of cinnamon. Sprinkle over the top and bake for 50 minutes to one hour or until a tester inserted in centre comes out clean.
