Coconut cream pound cake
1 cup butter (real butter)
3 cups sugar
3 cups flour
1/4 tsp salt
1 tsp vanilla extract
1 8 oz cream cheese softened
6 eggs
1/4 tsp baking soda
6 oz coconut
1 tsp coconut extract (I use 1/2 pineapple and 1/2 coconut extract)
Optional Glaze: \
1 1/2-2cups Powdered Sugar
1t coconut extract
1/4cup Cream of Coconut (Coco Lopez...this is optional)
enough water to make it a glaze
Recipe
Cream butter and cream cheese together, then add sugar. Next add
eggs and extracts. After blending well add soda and salt. STIR in
flour. Add coconut. Then pour batter into a greased and floured 10
inch tube pan. Bake at 325 for 1 1/2 hours. Cool 10-15 minutes before removing from pan.
Optional Glaze:
Pour on top of cake and it will drip down the sides to make a
pretty presentation.
