Old Fashioned Apple Sauce Cake
2 c. packed light brown sugar
1 ½ c. all-purpose flour
¾ c. whole wheat flour
1 Tbsp. pumpkin pie spice
¼ tsp. ground cloves
2 tsp. baking powder
1 tsp. salt
1 ¾ c. White House Apple Sauce
½ c. vegetable oil
2 tsp. vanilla extract
3 eggs
Caramel Apple Glaze
1/4 c. packed light brown sugar
2 tbsp. White House Apple Sauce
1 tbsp. butter or margarine
1 tbsp. light cream or milk
3/4 c. confectioners' sugar
1/4 c. walnuts or pecans, toasted, chopped (optional)
Recipe
Preheat oven to 350°F. Grease 10-inch Bundt pan. Combine first 8 ingredients in mixing bowl. Add White House Apple Sauce, oil, vanilla and eggs. Mix on low speed until ingredients are moistened. Beat on high speed for 2 minutes. Pour into prepared pan. Bake for 45-50 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on rack for 20 minutes then turn out of pan and cool completely.
For Glaze: In saucepan, combine sugar, White House Apple Sauce, butter and cream. Bring to a boil. Continue boil, stirring, for 2-3 minutes. Remove from heat; cool 20 minutes. Whisk in confectioners' sugar until smooth. Spoon over top of cake. Garnish with nuts.
