    Fudge Brownie Cupcakes


    3 squares unsweetened chocolate
    1/2 cup butter or margarine
    2/3 cup flour
    1/4 teaspoon baking powder
    2 large eggs
    1 cup plus 2 tablespoons sugar
    1 1/2 teaspoons vanilla
    1/4 cup milk
    1/3 cup chopped nuts (optional)

    Preheat oven to 325 degrees F. Line 12 muffin cups with papers.

    Melt chocolate and butter or margarine in a saucepan over low heat, or in a small bowl in microwave. In a separate bowl, beat eggs until frothy. Gradually beat in sugar. Continue beating until mixture is as pale and thick as mayonnaise. Add chocolate mixture and vanilla; blend, then mix well. Mix flour with baking powder. Alternately add dry ingredients with milk to chocolate-butter mixture. Stir in nuts, if using. Spoon batter into baking cups.

    Bake for 25 - 30 minutes, or until firm around the edges but still soft in center.
