    Hummingbird Cupcakes


    3 cups of flour
    2 cups of sugar
    1 teaspoon salt
    1 teaspoon baking soda
    1 teaspoon cinnamon
    3 eggs, beaten
    1.5 cups vegetable oil
    1.5 teaspoons vanilla
    1 (8 oz.) can crushed, pineapple, undrained
    2 cups chopped nuts
    2 cups chopped bananas

    Cream Cheese Icing

    1 (8 oz.) pkg cream cheese, softened
    1/2 cup margarine, softened
    2 (16 oz) boxes powdered sugar
    Milk
    2 teaspoons vanilla

    Recipe





    Combine dry ingredients in a large mixing bowl Add eggs and oil; stir until ingredients are moistened. Do not beat. Stir in vanilla, pineapple, nuts, bananas. Spoon into 3 greased and floured 9-inch cake pans. Bake at 350 degrees for 25 to 30 mins. Cool. Frost with cream cheese icing. Sprinkle chopped nuts on top.

    Cream Cheese Icing

    Combine cream cheese and butter until smooth. Add powdered sugar and milk to make fluffy. Add vanilla and mix.
