    Perfect Orange Cupcakes


    Cupcake Batter:

    2 cups all purpose flour
    1/3 cup sugar
    1 tablespoon baking powder
    1 tablespoon grated orange zest
    1/2 teaspoon ground cinnamon
    1/2 teaspoon butter-flavored salt
    1 cup orange juice
    2 egg whites, slightly beaten
    1/4 cup melted reduced-fat margarine, slightly cooled
    1 teaspoon orange extract
    1 teaspoon butter-flavored extract

    Orange Frosting:

    1 cup powdered sugar
    1 tablespoon reduced-fat margarine
    1 tablespoon orange juice 1/2 teaspoon grated orange peel

    1. To make the cupcakes, place the flour, sugar, baking powder, orange zest, cinnamon, and butter-flavored salt in a medium-sized bowl, and stir until well blended. Using a large spoon, make a well in the center of the ingredients. Set aside.

    2. Place all of the remaining batter ingredients in a medium-sized bowl, and stir until well blended.

    3. Pour the orange juice mixture into the well of the dry ingredients, and stir just until the dry ingredients are moistened. The batter should still be lumpy.

    4. Fill the cups of a 12-cup nonstick muffin pan two-thirds full with the batter. Bake in a preheated 400°F oven for 15 to 20 minutes, or just until a toothpick inserted in the center of a cupcake comes out clean.

    5. Place the muffin tin on a wire rack, and allow the cupcakes to cool in the tin for 10 minutes. Remove the cupcakes from the tin, and allow to cool completely on the rack.

    6. While the cupcakes are cooling, place all of the frosting ingredients in a small bowl. Using an electric mixer, beat the frosting for 2 to 3 minutes, or until the frosting is smooth and of a spreadable consistency.

    7. Using a butter knife or small spatula, spread the frosting over the cooled cupcakes, swirling the frosting in an attractive pattern. Serve.

    Makes 12 muffins
