    Strawberry Ice Cream Cheesecake



    2 tsp sugar or sugar substitute
    2 cups heavy cream
    1/2 cup lowfat cream cheese, room temp
    1 pound strawberries
    1 1/2 tsp vanilla
    14 oz can sweetened condensed milk

    Recipe




    Line loaf pan with 2 pieces of parchment paper, leaving a overhang on all 4 sides. Beat condensed milk, cream cheese and vanilla in a bowl until combined. Add heavy cream, beat until thick stiff peaks form 5 min. Using a food processor or blender, puree half the strawberries. Spoon half the vanilla cream mixture into pan. Tap pan to get rid of air bubbles. Fold 1/3 of the strawberry puree into remaining cream mixture until combined.

    SPOON remaining strawberry puree over pink cream mixture and fold in, leaving streaks of the puree to create a swirled cream. Spoon over vanilla cream in pan, tap pan to distribute mixture and get rid of any air bubbles. Cover freeze 8 hours. 30 minutes before serving, cut remaining strawberries into pieces, toss with sugar. Let sit 25 min. When ready to SERVE, invert cake onto a platter, remove pan and parchment.
