Apricot Cherry Cobbler
8 fresh ripe apricots
1/3 cup sugar
1/3 cup sugar
2 cups fresh sweet cherries, pitted
1 Tbsp. flour
1 cup all purpose flour
1/2 cup yellow cornmeal
1/4 tsp. salt
1 Tbsp. sugar
2 tsps. baking powder
1/2 tsp. orange zest
1/4 cup unsalted butter, chilled
3/4 cup lowfat milk
Recipe
Heat oven to temperature 375 degrees. Combine apricots and sugar; set aside. Combine cherries and flour; set aside.
Combine next 6 ingredients Cut in butter until mixture resembles coarse meal. Add milk; stir just to moisten dry ingredients. Combine set-aside fruit in well-greased 8 inch baking dish. Spoon batter over top. Sprinkle remaining sugar on top. Bake 25 to 30 minutes, or until golden brown.
Cool slightly and serve.
Serves 8.
