Chocolate Oat Squares from Rita
1 cup plus 2 tbsp butter, softened and divided
2 cups packed brown sugar
2 eggs
4 tsp vanilla, divided
3 cups quick-cooking oats
2 1/2 cups flour
1 1/2 tsp salt
1 tsp baking soda
1 can (14 oz.) sweetened condensed milk
2 cups (12 oz.) semisweet chocolate chips
1 cup chopped walnutsRecipe
In a large mixing bowl, cream 1 cup butter and the brown sugar until light and fluffy. Beat in the eggs and 2 tsp vanilla. Combine the oats, flour, 1 tsp salt, and the baking soda. Stir into the creamed mixture. Press two-thirds of the oat mixture into a greased 15 x 10 inch baking pan. In a saucepan, combine the milk, chocolate chips and the remaining butter and salt. Cook and stir over low heat until the chocolate is melted. Remove from the heat. Stir in the walnuts and remaining vanilla. Spread over the crust. Sprinkle with the remaining oat mixture. Bake at 350 F for 25 minutes or until golden brown. Cool on a wire rack. Cut into bars.
