    Orange-Cashew Bars


    Crust:

    1/2 (8 ounce) package reduced-fat cream cheese
    1/2 cup powdered sugar
    1/4 cup brown sugar, packed
    2 teaspoons vanilla
    1 egg yolk
    1 1/2 cups all-purpose flour

    Middle layer:

    1 1/2 cups brown sugar, packed
    1/2 cup fat-free, cholesterol-free egg substitute
    3 tablespoons all-purpose flour
    2 teaspoons vanilla
    1/4 teaspoon salt
    1 egg yolk
    1 1/2 cups cashews, coarsely chopped

    Orange glaze:

    3/4 cup powdered sugar
    1 tablespoon orange juice
    1 teaspoon grated orange peel

    Crust: grease a rectangular 13 x 9 x 2-inch pan. Beat cream cheese and sugars in a medium bowl with an electric mixer until fluffy. Beat in vanilla and egg yolk. Gradually add flour until soft dough begins to form. Knead dough on a floured surface for 1 minute (dont over knead). Press dough evenly into pan and bake for 15-20 minutes or until lightly browned

    Middle layer: beat all ingredients (except cashews) together with an electric mixer for about 2 minutes. Stir in cashews and spread over baked crust. Bake for 18-20 minutes or until top is slightly browned. Cool pan on a wire rack.

    Glaze: Mix powdered sugar and orange juice together to make a glaze and then spread evenly over baked layers. Sprinkle with remaining cashews and cut into 48 bars and serve.
