    Oatmeal- Brown Sugar Apple Pie from Wendy


    Pate Brisee (French Basic Pie Crust)

    2 ½ cups all-purpose flour
    1 teaspoon salt
    1 teaspoon sugar
    ½ lb (2 sticks) cold unsalted butter, cut into small pieces
    ¼- ½ cup ice water

    Old Fashioned Apple Pie Filling

    8-10 Red Delicious or Granny Smith Apples (I like to use 5 of each)
    ½ cup sugar
    1 teaspoon ground cinnamon (I’m from the south, I always add more!)
    Pinch of ground mace
    Pinch of nutmeg
    2 tablespoons cold unsalted butter, cut into small pieces

    Put the flour, salt, and sugar in the bowl of a food processor. Add the pieces of butter and process for approximately 10 seconds, or just until the mixture resembles coarse meal. (To mix by hand, combine the dry ingredients in a large mixing bowl. Using a pastry blender or two table knives, cut in the butter until the mixture resembles coarse meal.)

    Add ice water, drop by drop, through the feed tube with the machine running, just until the dough holds together without being wet or sticky; do not process more than 30 seconds. Test the dough at this point by squeezing a small amount together. If it is crumbly, add a bit more water.

    Turn the dough out onto a large piece of plastic wrap. Grasping the ends of the plastic wrap with your hands, press the dough into a flat circle. This makes rolling easier than if the pastry is chilled as a ball. Wrap the dough in the plastic and chill for at least an hour.

    I often partially bake the pastry for ten to twelve minutes before adding the filling to ensure a crisp bottom.

    Old Fashioned Apple Pie Filling

    Preheat oven to 375’.

    Center the round of pastry in an 8 inch pie plate, pressing it in well. Place the apple slices in the pastry and sprinkle with the sugar and spices. Dot with butter. Add Oatmeal topping and bake for approximately 45 minutes, or until the crust is golden brown and the filling bubbly. Let cool slightly and gently slide the pie from the baking tin onto a serving dish.

    Oatmeal/ Brown Sugar Topping

    Combine ¼ lb (1 stick) cold unsalted butter and ½ cup all purpose flour in a food processor. Pulse until the mixture resembles coarse crumbs. Add ¾ cup packed brown sugar and 1 cup rolled oats and pulse one or two times to combine. Sprinkle over the filling and bake.
