Upside-Down Southern Apple Pie
1/4 c. margarine, softened
2/3 c. pecan halves
2/3 c. brown sugar, firmly packed
pastry for double-crust pie
6 c. cooking apples, peeled and sliced (about 1 1/2 lbs.)
juice of 1 lemon
1/3 c. brown sugar, firmly packed
1 T. all-purpose flour
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
Recipe
Spoon butter in bottom of a 9-inch pie plate. Arrange pecan halves around bottom of pan. Sprinkle 2/3 cup brown sugar over pecans.
Roll half of pastry 1/8-inch thick and press firmly into bottom and along sides of pan; trim off excess pastry. Combine apples and lemon juice in mixing bowl; then combine 1/3 cup brown sugar and remaining ingredients. Toss gently; spoon evenly over crust. Roll remaining pastry and transfer to top of pie. Fold edges under and flute. Prick with fork on top and bake at 450 degrees for 10 minutes. Reduce temperature to 350 degrees, and bake for 30-40 minutes. Cool for 5 minutes, then turn pie upside down on pie plate.
