No Crust Coconut Pie
4 eggs, beaten
1¾ cups sugar
2 cups whole milk
3/4 stick margarine, melted
3/4 cup flour
1 tablespoon vanilla
2½ cups flaked coconutRecipe
Combine all ingredients in a large mixing bowl and stir until well blended. Grease two
9-inch pie plates. Divide mixture evenly into pie plates. Bake at 350º for 30-45 minutes or until golden brown.
Note: Best to make several days ahead and store, covered, in the refrigerator.
