    Apple Pie Bread Pudding



    1 loaf French bread, cut into 1 inch cubes
    8 eggs
    8 oz. cream cheese
    3 cups buttermilk
    1/4 cup sugar
    1 T. vanilla extract
    1/4 t. salt
    1 can (21 oz) cinnamon and spice apple pie filling
    cinnamon sugar (2 T. sugar mixed with 1/2 t. ground cinnamon)

    Distribute bread cubes evenly in a greased 13 x 9 inch baking pan. In a large bowl, beat eggs, cream cheese, buttermilk, sugar, vanilla and salt. Stir in pie filling; mix well. Pour batter over bread cubes. Sprinkle lightly with cinnamon sugar. Cover and refrigerate overnight. Preheat oven to 350. Uncover pan and bake for 45 to 60 minutes or until pudding is puffed and golden brown. Let stand 5 minutes before serving.
