Easter Potatoes
2 pound bag of bag Ore-Ida hash browns, thawed
1 can cream of chicken soup
1 cup of chopped scallions
1 pound of sour cream
8 ounces of grated sharp (or mild) Cheddar cheese
Optional: 1 stick melted butter and crushed potato chips for topping
Recipe
Mix all the ingredients. Save some cheese for topping. Cover with foil and refrigerate overnight. Remove cover and bake at 375ºF. for 45 minutes to 1 hour. Serves 8.
