    Stuffed Easter Ham


    5 pounds canned ham
    3/4 cup chopped onions
    3/4 cup chopped celery
    6 tablespoons butter
    4 1/2 cups bread cubes
    1 1/2 cups chopped peeled apple
    1/3 cup raisins
    1 cup chicken broth
    2 tablespoons minced parsley
    1/2 teaspoon cinnamon
    1 10 ounces pineapple preserves

    Cut ham into 20 slices. Place on foiled jellyroll pan. Saute onions and
    celery in butter in skillet until tender. Combine bread cubes, apples,
    raisins, broth, parsley, cinnamon and sauteed vegetables in a large bowl.

    Mix lightly but well. Arrange stuffing between slices leaving 2 slices
    between stuffing layers. Tie securely with string. Cover loosely with
    foil. Bake in 350 oven for one hour. melt preserves in small saucepan
    over low heat. Remove foil, continue baking for one hour more basting with
    preserves several times in the last 30 minutes. Bake until stuffing
    registers 165 on meat thermometer remove from heat. Let stand 10 minutes.

    Serves 12 people.
