    Egg Curry


    4-6 egss
    1 chopped onion
    1 chopped tomato
    1 tbsp ginger garlic paste (substitute whole/minced garlic)
    2 cloves
    2 cardamom
    1 cinnamon stick
    1/2 tsp mustard seed
    1/2 tsp cumin seed
    1 dry red chilli
    pinch of turmeric
    1/2 tsp chilli powder
    salt to ta

    2 Tbsp Oil

    Heat oil in a pan. Turn the heat to medium

    Add the mustard seeds, cumin seeds, red chilli, cloves, cardamom, cinnamon stick and fry for 30 seconds

    Add the chopped onions and fry until light brown

    Add the ginger garlic paste and fry for 2 minutes, keep stirring

    Add the chopped tomatoes and cook till tomato is cooked.

    Add Chilli powder and cook for 1 minute

    Add salt and cook for 1 minute

    Add 4 eggs and keep stirring on medium low for 3 minutes or till eggs are cooked.

    Switch off the stove and garnish it with cilantro

    Serve with hot white rice or with bread/pita.

    Option: Mix with hot rice and saute in 2 tsp of oil for 2 minute on a pan and you have egg fried rice.
