Mexican Deviled Eggs
12 hard-cooked eggs, peeled
1/4 C. mayonnaise or salad dressing
1 jalapeno pepper, seeded and finely chopped
1 T. ground cumin
1 T. finely chopped capers
1 T. prepared mustard
1/2 tsp. salt
chili powder
snipped cilantro
Recipe
Cut eggs lengthwise into halves. Slip out yolks; mash with a fork. Stir
in mayonnaise, jalapeno pepper, cumin, capers, mustard and salt; mix until smooth. Fill egg whites with egg yolk mixture, heaping lightly.
Sprinkle with chili powder; garnish with cilantro.
Makes 24 appetizers
