    ( This is a cake popular in South Wales, where my family is from-hope you enjoy it. )

    Anglesey Cake (Welsh) Teisen Sir Fon


    8 oz self-raising flour
    3 oz butter
    3 oz sugar
    1 egg
    3 oz mixed fruit
    3 tablespoon milk
    1 pinch salt

    Recipe




    Cream the butter and the sugar. Beat the egg and beat into the butter and sugar mixture. Sift the flour and salt together and fold into the mixture. Add the fruit and enough milk to give a soft 'dropping' consistency. Place in a greased tin in a moderately hot oven 375/F for 45 minutes.

    Yield: 1 cake
