Lebanese Moussaka
* 4 - Fried or Baked Eggplant (traditional is fried, but we opt for the healthier version of baked)
* ½ pound lean ground beef
* 2 Large Tomatoes - diced
* 4 Teaspoon Pine nuts
* 2 Medium Onions
* 1 can Tomato Sauce
* ½ teaspoon Middle Eastern spices
* Pinch of Salt and PepperRecipe
Peel eggplant, cut lengthwise in quarters. Brush with vegetable oil and place in a baking pan. Broil until light brown.
Sauté pine nuts, meat, onions, salt, pepper and spices until medium cooked.
Make a slit in each eggplant lengthwise. Stuff with meat mixture and over eggplant. Pour tomatoes with their juice and sauce over the meat mixture. Cover with aluminum foil and bake at 375 degrees for about an hour.
This is typically served over Lebanese rice
