    Poland Apricot Coconut Kolaches


    12 Rhodes frozen yeast dinner rolls
    2 c finely chopped dried apricots
    1/4 c brown sugar twin
    2 tsp coconut extract
    2 tbsp unsweetened applesauce
    2 tbsp flaked coconut

    Recipe




    Spray a large baking sheet with butter flavored cooking spray. Evenly space rolls on prepared sheet. Cover with cloth and allow to thaw and rise. After rolls have risen, place apricots in a medium bowl and cover with 1 c boiling water. Let stand for 5 minutes. Drain and return softened apricots to bowl. Add Brown sugar twin, coconut extract, and applesauce. Mix gently to combine. Make an indentation in center of each roll. Evenly fill indentations with a full tbsp of apricot mixture.

    Sprinkle 1/2 tsp coconut over top of each. Cover with cloth again and let rolls rest for 10 min.

    Lightly spray top of each roll with butter flavored cooking spray. Bake for 10-15 minutes at 400 degrees until golden brown. Lightly spray the tops again with butter flavored spray. Place baking sheet on a wire rack to cool for 5 minutes. Remove from sheet and continue to cool on rack.
