    Chinese Stir Fry Treat


    1 lb. pork loin
    8 oz. can pineapple chunks
    1 1/2 Tbsp. soy sauce
    3 t. clover honey
    2 Tbsp. minced garlic
    1 Tbsp. corn starch
    4 oz. angel hair pasta
    3 Tbsp. virgin olive oil
    1 Vidalia onion, sliced thin
    1 red pepper, chopped in 1/2-in. squares
    1/4 c. chicken broth
    1 c. pea pods, cut in thirds

    Recipe






    Trim fat off of pork loin and cut into 1/3-inch cubes.

    Drain pineapple chunks, reserving liquid. Mix drained pineapple juice, soy sauce, honey and garlic with corn starch. Add meat and stir until well coated. Cover and refrigerate overnight.

    Cook pasta as package directs.

    Pour 1 Tbsp. olive oil in wok and heat over medium heat. Combine remaining 2 Tbsp. olive oil with marinated pork, onions and bell pepper. Stir fry meat until meat is no longer red. Remove pork from wok.

    Add broth, pea pods, pineapple and cooked pasta. Cook about 2 minutes stirring lightly until sauce is thickened. Pour sauce over heat.

    Makes 4-6 servings.
