    Oven German Potato Salad from Penny


    1 lb. potatoes, cooked, peeled & sliced
    6 slices bacon, cooked & crumbled, reserving 3 tbsp. drippings
    2 tbsp. chopped onion
    1/4 c. sugar
    1 tbsp. cornstarch
    1/2 tsp. dry mustard
    1 tsp. salt
    1/2 c. water
    1/4 c. lemon juice
    1/4 c. cider vinegar
    1/4 c. chopped celery

    In 2 quart shallow baking dish, combine potatoes, bacon and onion;
    set aside. In small saucepan, combine sugar, cornstarch, mustard and
    salt. Gradually add reserved drippings, water, lemon juice and
    vinegar; mix well. Over medium heat, cook and stir until
    thickened; pour over potatoes. Let stand for several hours to blend
    flavors. Stir in celery. Bake at 350 degrees for 30 minutes or
    until hot.

    Makes 6 servings.
